A very rare spice with a mysterious and unique aroma.
Iris root has a floral scent reminiscent of violet. More used in cooking a few centuries ago, it is today more known for its use in cosmetics and perfumery. It is sometimes used to flavor desserts and it is part of the composition of the best ras-el-hanout (there are, of course, in this one). It is also used, along with other spices, to flavor gin. To add, in small quantities and married to other spices, in the stews, or even to use to flavor a syrup or a dessert based on cream.
Our iris roots are cultivated in mountainous terrain, in the Appenines of north-central Italy. They are harvested by hand each year, in August, before being peeled and dried.
