Guinea fowl liver mousse is a product similar to duck foie gras. Unlike duck, the guinea fowl's liver "feeds by itself" in 30 to 40% of cases creating, what is called, a blond liver. Thus, guinea fowl mousse is found to be one in between between foie gras and traditional mousses. The foams keep for 3 years after the date of manufacture at room temperature (before opening). Refrigerate 2 hours before consumption and keep as cold as possible for better consumption. Keeps in the fridge for 10 days (after opening).
